1/2 lb fresh bean sprouts rinsed and drained
2 cups cooked chicken or shrimp
1/2 cup celery thinly sliced
1 can water chestnuts sliced & drained
1/3 cup green onions thinly sliced
1/2 cup slivered almonds toasted
1 cup Chow mein noodles canned
4 cups lettuce leaves torn
GINGER MAYONNAISE DRESSING:
1/2 cup mayonnaise
1/2 cup plain yogurt
1 teaspoon ground ginger
1 teaspoon lemon peel grated
1 tablespoon lemon juice
1 tablespoon soy sauce
1/4 teaspoon curry powder
Rinse sprouts, drain & pat dry with paper towel. In large bowl combine sprouts shrimp or chicken, celery, water chestnuts & green onions. Cover & chill 2-3 hours.
In small bowl combine dressing ingredients. Cover & chill.
To serve, gently combine the two mixtures Add lettuce and toss lightly. Sprinkle with chow mein noodles.
Serving Ideas: A great Luncheon main dish salad!
